Recipe for Brussel Cookies adapted from AllRecipes
Ingredients for approx. 1 dozen sandwich cookies
1/2 cup quick cooking oats
2 tbsp all-purpose flour
1/4 tsp salt
3/4 tsp baking powder
1/2 cup white sugar
1/4 cup butter, softened
1/2 egg, lightly beaten
1/2 tsp vanilla extract

Directions
1) Preheat oven to 325 F. Cover baking sheets with foil, then coat the foil with a non-stick cooking spray.
2) In a medium bowl, combine oats, flour, salt, and baking powder. In a large bowl, cream sugar and butter until fluffy. Beat in egg and vanilla. Mix in the flour and oat mixture until just combined.
3) Drop dough by teaspoonfuls onto the prepared baking sheets, 2 1/2 inches apart.
4) Bake for 10 to 12 minutes, or until edges turn golden. Cool, then peel cookies off with your fingers. Be sure to re-spray baking sheets with non-stick cooking spray between batches.

Recipe for Milano Cookies adapted from FoodNetwork
Ingredients for approx. 2 dozen sandwich cookies
1/4 cup butter, softened
(1/2 + 1/3) cup powdered sugar
2 egg whites
1.5 tsp vanilla extract
1/2 cup all-purpose flour

Directions
1) Cream the butter with the sugar. Add the egg whites gradually and then mix in the vanilla. Add the flour and mix until just incorporated.
2) Make a piping bag with wax/parchment paper or use a ziploc bag.  Pipe 1-inch sections of batter onto a parchment-lined sheet pan, spacing them 2 inches apart as they spread.
3) Bake in a preheated 350 F oven for 10 minutes or until light golden brown around the edges. Let cool on the pan.

Recipe for Mint Dark Chocolate Ganache
Ingredients
1/4 cup dark chocolate chips
2 tbsp heavy cream
1/2 tsp mint extract

Directions
1) Combine chocolate chips and heavy cream in a microwave-safe bowl.  Heat in 10-second increments, stirring in between until chocolate has melted.  Be careful not to overheat.
2) Add mint extract and stir.
3) Spread onto one cookie and sandwich with another.
